Al Dente was founded in April 2020 by Andrea Vignali, one of Melbourne’s best young up-and-coming chefs. When COVID-19 put the his employment on hold (at one of Melbourne’s stalwart Italian restaurants), Andrea established Al Dente to provide handmade pasta for at-home-dining. As Vignali got busier, he enlisted the help of his friend, and equally talented young chef, Davide Bonadiman. Like Andrea, chef Davide hails from Italy – the pair have worked together for years, and share very similar philosophies. Al Dente is now an approachable fine dining restaurant, run by Andrea, Davide and Michelle Badek, offering Modern Italian fare, with a concise wine list and cocktail offering, in an intimate and warm dining space in Carlton.

Exquisite, creative pasta, friendly service, and a well curated interesting wine list. Definitely worth coming back to to try more dishes. The Cacio Pepe dish was really good. My only suggestion is I would like to see more Italian wines by the glass, but this isn’t a complaint at all.

Caught up with a friend for lunch and had an amazing meal. Oysters, scallops, octopus, and an amazing spaghetti with fish roe and Moreton Bay bug. The food was exceptional and they had an excellent choice of beverages including non-alcoholic. Service was also fantastic, highly recommend.

One of the best restaurants I’ve been to in Melbourne! The owner/head chef makes sure each meal is prepared and presented with excellence! Within 5 mins of seating the chef came and introduced himself and his restaurant! He continued to make sure our meal was prepared with perfection! The wait stuff in particular Rory was amazing! I had such an amazing experience and couldn’t recommend this place enough!

My friends and I dined there the other day and we had a fantastic experience. The food is exceptional and is prepared with the utmost care. The staff members are friendly and eager to provide high quality service. The menu has a variety of options and the prices are reasonable considering the quality of the food. I highly recommend it!

I have not one bad word to say about al dente. from the moment i stepped in, I was in awe! the restaurant itself is beautiful, cosy and warm with romantic round candlelit tables. the waitstaff were consistently friendly, accomodating and kind throughout the night. especially thankyou to Denis who ensured our night was joyous and memorable! the food took our experience to the next level, with some of the best pasta we’ve tried in melbourne being served. their signature cacio e pepe tortelloni is a must – pillowy soft clouds of luscious, rich cheese encased in the most perfect and fresh pasta, topped with freshly grated paramsen cheese. it was simply beautiful. we ordered a simple mixed salad and instead were served the grilled cos lettuce, we didnt mind this however when bringing it up with staff they insisted we keep it on the table at no charge, happy to see us enjoy it, while also bringing us the original salad ordered. so kind. desserts were an adventure! we loved the live shave of the choc truffle (a intriguing and pleasant flavour experience!) as well as the unique yet delicious, melt-in-the-mouth Torte Sabbiosa, which paired perfectly with the lemon curd base. overall we have the most wonderful time at al dente – felt truely welcomed and as though the staff didnt want us to leave! I cannot wait to return and try more of their thoughtful and unique menu. thankyou!

10/10 service and immaculate attention to detail with recommendations, service standards and food presentation. The menu in the Sapori room provides a multitude of classic Italian starters and mains, all with a small ounce of flair. The flavour combinations of the buttermilk kingfish and steak tartare starters were like something I have never tasted before, just amazing. The cult classic lasagna and cacio e Pepe well exceeded our quite high expectations! I can not wait to return to Al dente.
