Haku Japanese Restaurant will open the door in May 2023. Haku is contemporary Japanese izakaya at new market and brought to you by the incredibly talented chef Hyundo of toko, makizo and mamasaan Fame. Hyundo was trained in traditional Japanese cooking, but his korean heritage sings through. Using both traditional & modern techniques, umami flavours are brought to life through his hand. Whether you dig into the green chilli Hiramasa Kingfish or enjoy the bite-sized Yuzu Sashimi taco, pork belly Hirata buns, the flavour combinations are inspired. Totally amazing dishes, attention to detail and uniqueness of recipes are impressive. I had the Jalapeno Roll a few hours ago and even though it was a large serving I still find myself thinking about it and wanting more!! Highly recommend! Stylish atmosphere and design. Yuzu tea was also delicious.

Very tasty, and generous portion sizes. Good value too ($98 for two people for a lot of food and a cocktail each). We had fried aubergine, wagyu rice bowl and karage chicken – all of which was excellent. Kingfish sashimi was ok – for some reason didn’t quite hit the spot but made up for by the rest which was yummy! Will definitely be going again.

Delicious food, we’ve been twice since it opened and it is my son’s new favourite Japanese restaurant. The menu is extensive with fresh ingredients, large range of vegetarian dishes and some fun creative options. All the dishes we’ve tried have been excellent so far.

I have been dining frequently with my friends and family at this most delicious new restaurant at Newmarket, Randwick. The food is sensational, fresh, delicious and served with a smile! The menu is extensive with many great options. I can recommend all their dishes. The panko prawn sushi and miso eggplant are so tasty and beautifully presented along with all their dishes. The Japanese beer is great too. The staff are very friendly and polite.
